Strawberry Dessert Pizza

Most women have cravings during pregnancy. Our partners do their best to satisfy those cravings. The most famous cravings is pickles and ice cream. For most of my pregnancies it was always shaved ice. However, when my oldest daughter was incubating, I craved strawberry pizza. My partner located a pizza store who agreed to give it a try. And my favorite Strawberry Dessert Pizza was born. I hope you enjoy it as much as I still do.

Ingredients:

  • Your favorite shortbread cookie dough. You can also get a package of shortbread cookies and crush until it looks like sand, mix with 2-3 tablespoons of melted butter. Mix until the butter and cookie stick together.
  • Strawberries. Depending on the size of the pizza you are creating you’ll want approximately 1 basket for a small, 2 for medium and 3 for a large. Take off the greenery and slice haphazardly into chunks and slices. Add 1/2 cup of sugar to the strawberries and set in refrigerator. The sugar will mix with the juice and create the “Sauce”
  • Cool Whip
  • Colorful Sprinkles.

Directions:

  1. Spread your cookie dough (or cookie crumble) onto a pizza pan. Using the bottom of a glass, press down on the dough until it fills the pan and is about 1/2 inch around. This acts like the crust.
  2. Place in a 350 degree oven, for about 6 minutes. Cool completely. When you touch the crust, there should be no heat felt at all.
  3. Spread the prepared strawberries to the edges.
  4. Take a dollops of Cool Whip and place around the pizza in a random places as if it were Mozzarella Cheese. Use the same glass as in Step 1 to lightly press the Cool Whip into a flatter shape to more closely resemble the cheese. You may find that you need to dip the bottom of the glass into sugar to prevent it from sticking.
  5. Sprinkle the Sprinkles over the the top of the pizza to brighten it up. Place in refrigerator for about 1/2. You may want to lock the fridge. I remember plenty of times that I had forgotten this step and the pizza developed fingerprints and finger slides. I don’t know what causes the fingerprints and find slides. I do know that locking the fridge somehow prevents those from appearing.
  6. Cut into slices and serve on paper plates (fine china will work as well)
