One of the things my husband and I loved to do before he passed was to camp. We were Camp Hosts for 5 years at a beautiful place in the Uintah Mountains of Utah called Mill Hollow. Mill Hollow Lake is perfect for just about any non-motorized watercraft. Any non-motorized watercraft work well with the size of the lake. It also has some of the best fishing in Utah. The variety of fish caught are plentiful. The weather there is pretty awesome as well. Of course, too early in the season and you’ll see snow. Later in the season the rain comes to the beautiful trees and flowers.

As Camp Hosts we normally would get tons of visitors and with most became fast friends. This is one of two offerings for our guests. Everyone loved them. When we do any type of get-together you can be sure this treat is on the menu

Mini Bacon Cheese Bites

Ingredients

  • Pre-made mini cheese balls or if not available, you can use your favorite cheese spread.
  • Bacon bits, premade real bacon bits are fairly easy to find on any grocery store’s shelves
  • Chopped chives. I like to get fresh and chop them up myself.
  • Pretzel sticks. Salted works the best for the taste I’m told so that’s what we use.

Directions

  • Make 1 inch balls using the cheese spread if you are unable to locate mini cheese balls pre-made, and set aside.
  • Add the bacon bits into a sealable sandwich bag.
  • Put the cheese balls into the sandwich bag and toss until the bacon bits adhere to them. Do a few at a time. Roll them in the chopped chives.
  • Insert a pretzel stick and then place on a platter.
