Lamb

Lamb brings thoughts of springtime, bunnies, chicks, and Easter. At our house growing up, we dressed up for Easter services and came home to Roasted Lamb with Mint Jelly. Anytime a dish will reminds me of a time spent with family members I try to include it in my menus.

While not too common, Lamb is steadily making its way into American hearts and stomachs. According to Wikipedia, sheep meat can be defined as Lambhogget, and mutton, generically sheep meat, are the meat of domestic sheep. A sheep in its first year is a lamb and its meat is also lamb. The meat from sheep in their second year is hogget. Older sheep meat is mutton.

Mutton: An older sheep is used for mutton. It is a more tough meat and generally is cooked slowly in liquid to tenderize the meat.
