This Hamburger Rollup recipe was developed on a Christmas Eve night when as young parents of 4 children and strapped for cash for anything. We were behind in the rent, groceries were thankfully given by our church and the local food pantry. My then husband had recently lost his job. There seemed to be no hope. We waited until the last moment before applying for food stamps. Dumb move on our part since we had no idea how long it could take for any approvals for any of the programs we had applied for.
We were lucky enough that the church had been donated a lot of hamburger as well as some Bisquick. That Hamburger Rollup became a tradition for every Christmas eve dinner as well as a donation of enough money to provide the recipe and ingredients for as many people as our small donation could provide.
Ingredients
- 1-2 pounds of hamburger
- A complete recipe for biscuits from the Bisquick box
- 1/4 tsp of garlic powder
- 1/4 cup of finely diced onion
- 3 pkgs of beef or brown gravy mix
Directions
- Brown the hamburger over med heat in skillet. When all the pink is gone, remove from heat and strain the oil/fat from the meat. Set aside.
- Following the recipe for biscuits on the back of the Bisquick Box, make the dough.
- Make one pkg of gravy following the directions on the pkg. Most likely will be one cup of cold water. I’ve found that the colder the water the easier it is for the mix to dissolve.
- Flour the countertop and knead the dough, sprinkling flour on the dough, until the dough is no longer sticky. Roll the dough into a rectangle approximately 6-8 inches in length and 4 inches wide.
- On a greased cookie sheet (or one lined with parchment paper) place the rolled out dough.
- Combine the meat and the gravy and mix until the meat becomes well coated. Spread the mixture on the rolled out dough on the cookie sheet.
- Fold the short ends over the meat, then the sides after that. It should look like a ice cream cake roll.
- Make the other two pkgs of gravy. When the gravy has thickened, pour the gravy over the hamburger roll
- Cook at 350 degrees for approximately 35-40 minutes. Watching for the roll to become golden brown. When you stick a toothpick into the roll, you’ll be looking for the toothpick to have nothing but gravy on it. No uncooked biscuit mix.
- Serve with a side of mashed potatoes, and favorite veggies.
