Ham and Egg Squares were one of the first breakfasts my late husband made me when we started our relationship almost 30 years ago. He would brag as he led me to the table that I would be amazed that he had actually created the dish. I figure his Mom taught him how to make it and he just adopted it for himself.
I hope you enjoy the recipe as much as we have over the years. It became our Christmas morning traditional breakfast since it’s an easy recipe to follow, so the kids could make breakfast, AND it tastes just divine.
Ingredients
- A Loaf of sandwich bread. Now isn’t the time to cheap out for the less expensive bread. Get a good quality bread for this recipe and you’ll never be sorry. You could use French bread however you would need to increase the eggs to accommodate the larger amount of bread.
- 1 pkg of small cubed ham
- 1 medium sized green or red bell pepper
- 1 dozen eggs, scrambled
- Medium package of your favorite shredded cheese.
- Salt and Pepper to taste
Directions
- Line the bottom of a cookie sheet with the bread.
- Add the ham and Peppers to the eggs.
- Pour the scrambled egg mixture carefully over the bread making sure to get it into every corner and every crumb is covered with the eggs
- Sprinkled Shredded cheese over all of the mixture.
- Season to taste.
I found with this recipe, I never could make enough. The kids would want 2nds and 3rds. So we decided to just do this on a holiday and this was the one we chose for our family. We found we liked this dish even better when served with a White Wine Mimosa. By substituting the Champagne with a sparkling white wine adds just the right amount of Awesomeness to the dish.
