Eggs In A Cone is a easily transportable way to get breakfast for everyone. A little more in depth as far as this goes, the results are well worth it.
Make the waffle cones
Ingredients
- ½ cup egg whites (about 4 large egg whites)
- Scant 1 cup granulated sugar
- 1 tsp pure vanilla extract
- ¼ tsp table salt
- 1 1/3 cup all-purpose flour
- 4 tbsp unsalted butter melted and cooled slightly
Instructions
- In a large bowl, whisk the egg whites, sugar, and vanilla together until combined. Stir in the salt, half of the flour (2/3 cup), the melted butter, and then beat in the remainder of the flour until smooth and no dry flour remains in the bowl.
- Make cones according to the manufacturer’s instructions for your waffle cone maker.
Make the Filling and Assembly
Ingredients:
- 1 package of bacon, cooked and cut into small chunks. Alternatively you could use packaged bacon bits, but the real thing is always the best.
- 1 pound of ground sausage, cooked and broken into small chunks
- 8 eggs, scrambled well
- 1 small pkg of frozen hash browns, cooked
- 1 pkg shredded cheese
- Salt and Pepper to Taste.
Instructions
- Mix meat and eggs together
- Cook over medium heat until the eggs are well cooked.
- In each waffle cone, put a portion of the hashbrowns.
- Sprinkle cheese on top
- Add a portion of the meat/egg mixture into each cone
- Top with cheese
- Cook in preheated oven to 350 degrees until cheese is melted.
- Cool to touch
- Serve
