Eggs In A Cone

Eggs In A Cone is a easily transportable way to get breakfast for everyone. A little more in depth as far as this goes, the results are well worth it.

Make the waffle cones

Ingredients

Eggs In A Cone
  • ½ cup egg whites (about 4 large egg whites)
  • Scant 1 cup granulated sugar
  • 1 tsp pure vanilla extract
  • ¼ tsp table salt
  • 1 1/3 cup all-purpose flour
  • 4 tbsp unsalted butter melted and cooled slightly

Instructions

  1. In a large bowl, whisk the egg whites, sugar, and vanilla together until combined. Stir in the salt, half of the flour (2/3 cup), the melted butter, and then beat in the remainder of the flour until smooth and no dry flour remains in the bowl. 
  2. Make cones according to the manufacturer’s instructions for your waffle cone maker. 

Make the Filling and Assembly

Ingredients:

  • 1 package of bacon, cooked and cut into small chunks. Alternatively you could use packaged bacon bits, but the real thing is always the best.
  • 1 pound of ground sausage, cooked and broken into small chunks
  • 8 eggs, scrambled well
  • 1 small pkg of frozen hash browns, cooked
  • 1 pkg shredded cheese
  • Salt and Pepper to Taste.

Instructions

  1. Mix meat and eggs together
  2. Cook over medium heat until the eggs are well cooked.
  3. In each waffle cone, put a portion of the hashbrowns.
  4. Sprinkle cheese on top
  5. Add a portion of the meat/egg mixture into each cone
  6. Top with cheese
  7. Cook in preheated oven to 350 degrees until cheese is melted.
  8. Cool to touch
  9. Serve
