Chicken Parm Bites

My kids really like these little bites of heaven. I could feed them lunch of these with the number of Chicken Parm Bites chosen dependent on their ages and appetites. They’re all grown up now so they make their own.

One of the nice things about this recipe is that your 6 years old and up child can help make these for an appetizer for Sunday dinner or movie night. Quick, delicious and the variety of ingredients you use is only limited by your imagination.

Chicken Parm Bites

Ingredients

  • Pretzel Chips
  • Popcorn Chicken, broken into smaller pieces. Try to get a single piece for each bite
  • Your favorite canned or jarred Pizza Sauce.
  • Mozzarella Cheese, shredded
  • Parmesan Cheese, grated. Any brand will do.

Directions:

  1. Preheat the oven to 350 degrees Fahrenheit
  2. Spread Pretzel chips in a single layer on a foil lined cookie sheet. The foil helps with cleanup
  3. Place Popcorn Chicken piece on each pretzel chip.
  4. On top, place 1/8 of a teaspoon on each construction.
  5. Sprinkle each construction with the Parmesan Cheese
  6. Top with Mozzarella Cheese
  7. Put in oven for 5 minutes. Since this recipe was made in an RV using a propane fueled oven, please watch to ensure the bites do not burn. Each oven temp is different when using propane as the fuel. We have a oven thermometer that helps but isn’t fool-proof.

  • Ritz Cracker with Pizza Sauce and Mozzarella Cheese
  • Multigrain Cracker with Tuna and Cheddar
  • Multigrain Cracker with Brie and Strawberry Jam
  • Ritz Cracker with Peanut Butter and Banana slices
  • Ritz Cracker with Crunchy Peanut Butter and Chocolate Drizzle
  • Multigrain Cracker with Sliced Strawberries and Chocolate Drizzle.
