One of my favorite memories of growing up, is watching my father clean his latest catch in the basement. After the skin was removed from the animal who gave their life to us, my father would slide a sharp knife through the meat on the carcass. The slice of raw meat place on a plate and when enough had been cut, the plate would be handed off to my mother. She would carefully season the meat and laid in a hot layer of grease. Cooked to perfection, we gave thanks for what we had and eagerly dove in to the most delicious of meat in our lives.

In general, the meat from game is divided into three different types of game. Feathered game, such as pheasants, quails, ducks, and partridges. Ground game contains such as rabbits, hares, and hares. Each having distinctly different game recipes. The many big game animals include bison, venison elk, water buffalo, goats and wild boars.

Enjoy the following recipes. When we were younger, my husband would travel up to the Unitah with his brothers and hunt. To be honest, I didn’t think they were actually hunting and spent their time together drinking and enjoying being in the outdoors with each other.
